She shared her secrets: farming, crushing, ageing – every step was crucial, as was the devotion and love felt throughout. Cintra Estate do everything themselves to ensure the highest quality produce and flavour.

They know how important it is to respect the history of their vinegar and maintain a classic taste, so they’ve only made a few tiny tweaks across the decades. But the secret to truly delicious vinegar? The land. They nurture and tend to their Billimari vineyard by hand, because they know every part of our process contributes to the flavour that ends up on your plate.
